VZ New Zealand Spinach!

How I prepare VZ New Zealand Spinach!

What you need:

Bag of VZ New Zealand Spinach leaves

Olive Oil

Small Shallot Minced

1 Tomato roughly chopped

and Peas (fresh or frozen)

Put 2 tablespoons of olive oil in a hot pan with the shallots.

Then after a few minutes, when the shallots are fragrant toss the spinach in the pan and stir to coat the spinach with the olive oil. Then after a few minutes the spinach will start to wilt. You can then add the tomatoes and some peas. Sprinkle with salt and pepper!
